elevated mushroom toast
This is a first.
I have NEVER shared a recipe with anyone, let alone online. Not because I am selfish, but because I am NOT a cook. Keeping that in mind, here is my recipe for "elevated" mushroom toast (made for my wife).
Elevated Mushroom Toast
Ingredients (nothing has to be exact):
- Baguette
- Butter
- Shaved parmesan, asiago, and/or romano cheese
- Mozarella cheese
- 2 1/2 cups Cremini mushrooms (sliced)
- 1/4 cup onion - diced
- 1/4 cup of red bell (or sweet) pepper
- 2 cloves garlic - diced
- 1/4 cup pancetta
- olive oil
- paprika
- Salt and pepper to taste
- Slice bread (approximately 1 inch thick); butter each slice
- Top bread slices with cheese blend (not mozarella...yet) and toast until golden brown
- Saute garlic and onion in olive oil, until fragrant
- Add pancetta and red bell pepper; continue stirring until pepper and onion soften
- Mix in mushrooms and stir until mushrooms have softened; season to taste with salt, pepper, and paprika
- Spoon mushroom mix onto each slice of bread and top with a slice of mozzarella cheese
- Toast until cheese is melted and golden brown
- Serve with crisp, tart apple slices (on the side)
I was pleased with the outcome. Next time I'll add a bit of freshly squeezed lemon to the mushroom mix (needs a little acid). My wife has to be cautious with tomatoes, but mixing in some halved cherry tomatoes would also be intriguing.
